Pineapple fried rice

Ingredients

  • 200 grams of jasmine rice
  • 1 egg
  • 100 ml of coconut milk
  • 1 teaspoon of turmeric
  • 1 sweet white onion
  • 2 cloves of garlic
  • 1 red chilli
  • 1 pineapple
  • Coriander to garnish
  • 400 grams of Zwan Beef Hotdogs

Preparation

STEP 1
Cook the jasmine rice according to the instructions on the packet. Then drain it.

STEP 2
Halve the pineapple. Carefully scrape the flesh of one half of the pineapple from the rind. You will serve the rice in this hollowed-out pineapple. Cut the pineapple flesh into cubes.

STEP 3
Beat the egg. Finely chop the garlic, onion and red chilli. Heat 2 tablespoons of sunflower oil in a frying pan over a high heat. Add the onion, garlic and chilli and mix briefly. Add the beaten egg and mix briefly.

STEP 4
After a few minutes, add the diced pineapple, beef hot dog slices and cooked rice. Season to taste with salt, pepper and turmeric.

STEP 5
Pour the coconut milk into the pan, mix everything well and cook briefly. Then serve the contents of the pan in the hollowed-out pineapple. Garnish with a little coriander if desired.
