Baked sweet potato mash with spring onion and apricot

Ingredients

  • 8 sweet potatoes (1 kg)
  • 1 spring onion cut into rings
  • 200 grams of chopped dried apricots
  • 3 tablespoons of olive oil
  • ½ spoon of curry powder
  • 1 tablespoon of crème fraîche
  • 340 grams of Zwan Beef Luncheon Meat slices

Preparation

STEP 1
Wrap each sweet potato in aluminium foil and bake them in the oven at 180 degrees Celsius until they are nicely soft.

STEP 2
Meanwhile, add the olive oil to the pan and heat it gently. Add the curry powder to the pan, stir it briefly and remove the pan from the heat.

STEP 3
Chop the apricots into small pieces.

STEP 4
Remove the sweet potatoes from the oven when they are nicely soft. Remove the aluminium foil and then carefully remove the skin from the sweet potatoes.

STEP 5
Mash the sweet potato filling until smooth and then add the crème fraîche, apricots and half of the sliced spring onion. Mix well and season with salt and pepper.

STEP 6
Serve the sweet potato mash in a deep dish and garnish it with the curry oil and sliced spring onion.

TIP
Cut the beef luncheon meat into 8 slices, grill the slices briefly on both sides and place them on top of the sweet potato mash.
