Basmati rice with spicy tomato sauce and chestnut mushrooms
Ingredients
- 4 cups of basmati rice
- 1 can of diced tomatoes (drained weight: 200 grams)
- 40 grams of fresh ginger, peeled and finely chopped
- 1 red chilli cut into rings
- 250 grams of chestnut mushrooms cut into quarters
- 2 tablespoons of chopped coriander
- 100 grams of roasted peanuts
- 2 tablespoons of oil for drying
- 200 grams of Zwan Chicken Luncheon Meat Hot & Spicy slices
Preparation
STEP 1
Cook the basmati rice according to the instructions on the package.
STEP 2
Add the diced tomatoes to a pan and add the red chilli and chopped ginger.
STEP 3
Add a little salt.
STEP 4
Cut the hot and spicy chicken luncheon meat into slices and fry them briefly in a little oil.
STEP 5
Add the mushrooms and fry the mix briefly.
STEP 6
Serve the cooked rice in a dish and spoon the spicy tomato sauce over the rice. Finish off by adding the mushrooms.
STEP 7
Garnish with chopped coriander and roasted peanuts.
