Caribbean bean dish
Ingredients
- 1 onion
- 1 red bell pepper cut into cubes
- 300 grams of sweetcorn
- 400 grams of kidney beans
- 400 grams of diced tomatoes
- 1 tablespoon of hot chilli sauce
- 1 teaspoon of cinnamon powder
- 1 tablespoon of fresh (or dried) thyme leaves
- 1 tablespoon of freshly chopped spring onion
- Salt and pepper
- 400 grams of Zwan Chicken Cocktail Sausages
Preparation
STEP 1
Gently fry the Chicken Cocktail Sausages in the pan. Add the bell pepper and fry briefly.
STEP 2
Then add the sweetcorn, diced tomatoes, chilli sauce, cinnamon, thyme and kidney beans and mix.
STEP 3
Bring to the boil and simmer gently for another 5 minutes.
STEP 4
Season to taste with salt and pepper.
TIP
Garnish the dish with a little sliced spring onion.
